Hi Jimbo - How often is real ale served using air pressure? This is not a practice that I am familiar with (ex-pub landlord, lifelong real ale drinker). As far as I know, the vast majority of real ale is served using a simple handpump. In the 60s (and a bit later), some breweries used an electric pump in pubs with high volume sales. This didn't affect the beer but did sometimes mean that you got less than a pint due to fobbing. Then oversize glasses were introduced. I've not lived in Britain for nealry 10 years but don't think that electric pumps are used too much now. I do recall that air pressure was used in Scotland but am not sure that this is still the case. I have to say that I know nothing about oxidisation of beer, it is new to me, so I'll try to educate myself on t'net (as we say where I come from).
