And Beer = BEER = beer??? No!!! I think you'll find that beers are not all identical, the CO2 itself is the same (one atom carbon, two of oxygen, conbined by the same bonding structure) but its effect on the beer is not. When beer is conditioned by secondary fermentation it is, chemically, an entirely different process to adding CO2 after the beer has finished fermenting. I hesitate to talk about wine on a beer boards but the comparison is useful. Champagne (Methode Champenoise) has an entirely different taste and character to the sparkle than sparkling wines made by the addition of CO2. They wouldn't go to all that trouble otherwise. Also environmentally it's got to be better to naturally produce (and retain) the carbon dioxide in the beer than to allow it to escape then produce more CO2 in a factory somewhere, put it in expensive pressurised containers and then re-introduce it to the beer. In a world where reduction of "greenhouse" gases is becoming increasingly important for our survival producing the CO2 twice is madness!!! |
