Ah, the attempt to pin dozens and dozens of different kinds of Lager in to nice, neat categories. Good luck! >> Are all "U" Biers Kellerbiers? Are all Kellerbiers "U"? << How many angels can dance on the head of a pin? >> Personally I don't think I have found any one single, defining characteristic common to all Franconian Kellerbiers. << You don't say! Kellerbier is, above all, lager beer which has been lagered in a Bierkeller. Ideally, it should also be served at the Keller in question, as traditionally as possible (bayerischer Anstich). Beyond that, it's whatever the brewer wants it to be, I suppose. The best ones, of course, are pale, hoppy, and dry, as you know, and served without CO2.
