A lot of breweries in the US use or used Ringwood yeast and did not have issues with diacetyl (e.g., Dogfish Head). It is a combination of the yeast and not using a long enough rest for the yeast to eat up the diacetyl. If you have ever eaten popcorn with "butter flavoring", you have eaten diacetyl. |
