Many of these flavor chemicals taste one way in minute amounts and another way in large amounts (when the tastebuds are overwhelmed). For example, benzaldehyde can taste like almonds in small amounts, but like cherries in large amounts. As for butterscotch vs butter, it might have to do with the other flavors of the beer interacting: if the beer is sweet, then the diacetyl might be perceived as butterscotch (which is butter plus sugar). |
