Wheat Beers |

I would say open fermentation is practiced more than "somewhat" -- every small brewery I've visited does open fermentation. I have been to a couple of places that claim to make the wort for their wheat beer, but send it off to a wheat beer brewery for fermentation and bottling. The only brewery in the Bamberg area that really used to specialize in wheat beers -- Lammbräu in Eltmann -- had cross contamination problems -- all their beers tasted like wheat beers :) That probably was a factor in why they stopped brewing. |
