To this Yank homebrewer (former), "bright" beer just means that it's "dropped bright". I've never heard about the other meaning. I don't see what the slower secondary fermentation has to do with shelf life; on the contrary, I would say that the average unpasteurised, unfiltered Franconian Lagerbier does not last as long as the average, unpasteurised, unfiltered Oregonian microbrewery ale does. How much do you know about this Hirschbräu's process? Do you know for certain that their bottled beer is bottle conditioned and not gassed? And there's a difference between b-c and simply not adding CO2 during bottling, right?
