Lager (bottom) yeast is supposedly more stable than ale (top) yeast -- that is while most large Weizenbier breweries (e.g. Paulaner, Spaten) filter out the fermentation yeast and bottle with a lager yeast. Schneider & Sohn is a major exception to this. I'd assume most small breweries bottle with the fermentation yeast -- that might be a question for someone to ask at Mahrs.
