Experimentation Is Good. Interesting to hear about the theory (or at least the idea or suspicion) about stability issues, as there are way too many bottled beers around here that don't last as long as they should. Would be interesting to know what malts and mashing techniques Meister uses, for example, since I have nearly given up on buying it in the bottle for fear of cardboard off-aromas/flavours. (cardboard == Pappe) This Dr. Lewis is the guy some people love to hate, right? I understand his knowledge is not to be dismissed lightly though!
