With kegs though, you have CO2 pumping the beer out and replacing it, so that oxygen (or rather, natural ambient air) does not affect the beer. CO2 "preserves" the beer. With a bayerisch Anstich / gravity barrel (or real ale cask), you have ambient air with oxygen replacing the beer. It appears that this will have negative effects on "dead" lager even after one night of exposure, whereas "living" real ale continues to produce its own CO2 to protect it from the oxygen. I imagine one could inject CO2 into an opened gravity barrel to protect the beer if one wanted to save it for later use....? Or one could use a "cask breather" so that CO2 replaces the beer volume in bayerisch Anstich barrels, just like they are sometimes used with real ale casks in the UK, right? (This CAMRA member would not object!) |
