My admiration for British Brewing lies in their ability to create really tasty ales at a strength of around 4% or less.
Welcome to being me, going on a decade ago. Really, in my 11-year-long Oregon life, I had such a greatly limited exposure to real cask ale, that I had no idea what it was really like. Discovery of it on travels to England after moving here spoilt my Kellerbierfanatacism. (Though I still manage to choke down a Mass or 2-1/2 on a bike tour...depending on the Kellerbier.)
We just don't quite seem to be able or more likely willing to do that here in the US and perhaps there really isn't a market for it anyhow. Also the fact that we do very little cask here probably plays a role. I agree these "session IPA's" that have started coming out are not very good. People don't seem to be able to get over their hop addiction.
Well, I wonder about the specific malts used. Specifically, if British floor malts give a different character (richer), what that means. And the cask-conditioning must help: you get a fruitier beer, even when dropped bright. The lower carbonation level, as Barry is right to go on and on about, also has an effect on the palate, it's not just about the burping.
Who would want, say, Roppelt Kellerbier to be gassier?
I'll have to ask a couple of English brewers about their <4% hopmonsters, because I wonder if there's that much difference between them and American session IPAs, hops-wise.
There's also the choice of hops. This onion/garlic/mutant-passion-fruit thing that's become so popular...WTF? OTOH, I drink a fair bit of Maisel & Friends Pale Ale, which has a nice, clean passion-fruit character. No onions. Nice. (Mixed with Störtebeker alc-free to yield 3.6%)
A new homebrewer asked me recently "What would happen if i did a really low gravity beeer and put a ton of hops in it?". My reply was "You'll have a thin beer that tastes of nothing but hops." It's not complicated.
Tell him that's all I brew (though not since last summer now): 1.036 OG pale ale malt, 10 g bittering, 100 g hopstand. Yes, thin and hoppy, just as the dear, sweet, vengeful Lord intended. |
