|All equipment references of mine are stainless steel. Although my brewery is small, all equipment is of same level/grade as bigger breweries.|
Smoke malt is very aromatic and no, hotside equipment, not entirely clean, won't cause infections. That happens after cooling.
Yeast to my knowledge has no memmory. As mentioned, it's almost impossible not to transfer any beer when reusing the yeast. Especially the way meny breweries do it Franconia. I've seen brewer do top cropping there.
If would be interesting, if you have the chance, to stick the head inside the Schlenkerla or Spezial mash tun to experience the aroma in a clean state.
