Lagering in Keller
Posted by Rob Sterowski on 2022-05-24 01:34:41
As we all know, the Keller were originally dug to provide a cold environment to allow for a long maturation of lager beer.

Are any breweries still using the Keller for their original purpose: taking it there after primary fermentation is finished and leaving it for three months until ready?

I would assume that these days the beer is fully matured in the brewery and just transported to the Keller shortly before it’s needed. But I would love to be wrong about that.

I am talking about the commercial Keller here, not the private Keller maturing their Hausbrauerbier.
