I totally agree Jason,even though these polypins are working on the same principle as a cask of ale,ie continuing to condition.two weeks after drawing your first pints from it the remaining ale would be a sad and sorry article.
Your point about freshness in cask ale imho is also very true. I have conducted"blindfold" consumer trials with a beer served at varing stages of its casklife,and it was not unknown for people to think it a different brand of beer after 3 days.Also very interesting results by varying the serving temperature,and serving the same beer from a keg cold,using mixed gas.
The perception of taste in ale/beer is a strange and oft hard to explain subject.
ps.time of day,pre or post meal etc also have a large impact on perception of taste.
