Just as an aside, the word "gespund" is sometimes used in English as brewing term, though I've only heard it used a few times. As you might expect, it is when the brewer seals the fermenter so that the CO2 no longer escapes and carbonates the beer. It is a tricky business because most of the fermenters used in small American breweries (brewpubs and microbreweries) cannot hold a lot of pressure. I've heard tales of (and saw it nearly happen once) when the brewer is transfering the beer out of the (sealed) fermenter and forgets to open it to the air and the resulting vacuum nearly implodes the tank (and bends the hell out of it.)
