Aischgründer Spiegelkarpfen (carp from the Aischgrund ponds and weirs), Bamberger Zwiebeln (stuffed onions Bamberg-style, especially with Rauchbier sauce), Schäuferla (pork shoulder, blade cut) with Wirsing (savoy cabbage), Zwetschgenbames (sliced beef smoked over plum wood and air-dried), and Nürnberger Bratwurst are typically associated with Franconia, or at least certain parts of Franconia. I like Bamberger Zwiebeln a lot. |
