Funny you mention this --I recall that discussion, BTW-- just yesterday we enjoyed fresh "U" and Rauchbier up at the Bamberger Spezi Keller. The U is CO2-driven, whereas the Rauchbier is from a big wooden barrel, poured under gravity. The U was delightful, not at all over-carbonated, whereas the Rauchbier was way, way too carbonated, as well as bloody cold. I had to drink a third of it down before I had room enough in the Krug to swirl off enough head --twice-- in order to make it enjoyable. (The weather and view made up for it though.) Why this would be, I don't know. What does he do to condition the Holzfässer? Was it overprimed? Gassed up with CO2? The bottled Stegauracher Hausbräu Lager at Pelikan was lovely, as was a later "U" at the Gaststätte. Oh, and a short Abseits visit was in there too--didn't see Gerhard or Fred though. I suspect Fred may have been somewhere out in the country yesterday. Today, a bike tour leading eventually to the Witzgall Keller is on order, then back home to grill. 25°C and sunny.
