The region has more opportunities for interesting beer than you might realize. Leipzig is one of the homes of the revivalist Gose style, and the Gosenschenke Ohne Bedenken is a worthwhile place to enjoy it; the Bayerischer Bahnhof brewpub also features Gose, and sells it to take away in rather unusual long-necked 75cl bottles. Near Jena, Talschänke Wöllnitz makes old-fashioned east-German (as in Berliner) Weisse and serves it at their own pub, and sells bottles for take-away as well. Both the Gose and the Weisse are utterly unlike anything you'll find in Franconia, remnants of older styles of brewing; in the case of Gose, it's a rare example of a beer allowed to be brewed in Germany that doesn't strictly adhere to Reinheitsgebot-derived rules. Jena also has a brewpub-hotel out on the west side of town, Weimar and Erfurt each have brewpubs and local/regional breweries, and all are reasonably close to each other. As far as the end of September goes, you still might have some vestiges of pleasant weather before the cooler, wetter days of autumn kick in. Bamberg is a pretty convenient centrally located city with good rail and transit connections, and there are plenty of village breweries within reach. If you need to be tempted away from "W(indisch?)," figure out how to get up to Sesslach, where the town's little Kommunbrauerei makes rustic lager served at two of the local guest-houses.
