mild

I was young (nearly 50 years ago!) and not really interested when I worked in pubs with this system, so I can't tell you precisely how the system was operated. I seem to recall that the handpumps for mild and bitter were in separate clusters, with separate drip trays and drainage systems. However, I couldn't tell you whether they all fed into the mild cask. Whether this would have made a big difference to the quality of the beer is difficult to assess. You have to remember that, in those days, pubs generally sold pretty large volumes of beer. For example, a friend of mine in Mancheser was running a Holt's pub in the early 1980s, dispensing mild and bitter from 54 gallon (200 plus litre) barrels. I seem to recal him telling me that he sold 3 to 4 barrels of bitter and 1 - 2 of mild in a weekend. The turnover ensured good quality beer and I think the odd pint or two from the drips trays wouldn't have made too much of a difference. Remember that it didn't stand in the trays but went straight back to the barrel. Several brewries in Manchester actually brewed two different sorts of mild - usually referred to as light or dark milds - which were sold alongside the bitter.
