History of Bottom Fermentation

Yeah, I don't know what came over me. Must be all the Oregon hops I've been consuming recently since I've started homebrewing again. I personally would be interested to read more about the early history of cold/bottom fermentation --especially going back to the middle ages-- such as Don has mentioned. References, anyone? (German or English, preferably not 14th century Bairisch!)
