Dryhopping!

I spoke to various people about it at the Brau-Beviale, and although it is already common practice at some breweries, no brewer will openly admit the hopfenstopfen/dry hopping. However, it seems to be "seen through the fingers". Stefan Stang and Werner Glossner of the Private Brauereien Bayern are seriously involved in getting it written down as allowed by the authorities. It seems all a follow-up from the education program for beer-sommeliers, set up by Axel Kiesbye from Trumer, Austria, in cooperation with Doemens. Lots of german brewers are getting aware of what's going on the rest of the world now... Good thing is that at the last Brau Beviale I noticed quite some traditional bavarian brewers at the tasting led by Charlie Papazian with Eric Toft (Schönramer) and Matt Brynildson (Firestone Walker). I silently expect that we're on the brink of an earthquake on brewing in Germany. Forerunners might be Faust (Miltenberg), Schönramer (Schönram), Camba Bavaria (Truchtlaching), Leuchtturm (Gunzenhausen), Schneider (Kelheim), Sitterbräu (Riedelsbach), Braustelle (Köln/Cologne), Riegele (Augsburg), Distelhäuser (Distelhausen/Tauberbischofsheim), and probably many more to follow...
