I think that much of the beer in Franconia is unpasteurized and unfiltered. If the yeast drops bright in the lagering tanks, and the beer is to be consumed relatively quickly, I think that filtering would not be necessary. But I could be wrong. In the US, we usually use the word "drawn" for casks, or "hand-pulled". For kegs, we say just say "poured" from the tap. As for Eschawo, I would just say the beer was "poured from tap".
