Why are Weissbiers top fermented? |

"Do you know why weissbier is top fermented while most of the barley-based brews are bottom fermented?" Well, top fermented beers are more ancient than bottom fermented, and I suspect that since Weissbier tastes better this way (with all of the fruity esters), it was kept top fermented once the bottom fermenting yeast appeared on the scene. Just speculation, though. |
