Public bus from Forchheim, either to Hallerndorf and then a walk up through the Kreuzberg kellers and down the other side or I think some buses go direct. I'm sure Nick et al can pass on the specific info. If you can get hold of this guide you'd be sorted:

Whilst I liked Roppelt's and I know people on this forum are big fans for good reason, personally I feel there are better kellers with better beer. Griess Keller (Geisfeld), Schmausenkeller (Reundorf - best views anywhere though taxi/long walk required), Schwannenkeller (Burgebrach - easy by bus from Bamberg and en route to Monchsambach and Brauerei Zehedner which is a must visit) Witzgall (Schlammersdorf) and of course Spezial Keller (Bamberg). There are so many though.
 
The good thing about Roppelt's is it's proximity to the Kreuzberg where you have 3 other Kellers next door to one another. Makes for a good day out.
