The story I heard was that Weyermann produces their Rauchmalz in another facility -- Hassfurt maybe? -- and not at the Bamberg facility. A garbled version of that might explain the rumor. Both Spezial and Schlenkerla use a fair amount of wood. Both have told me they age the wood for a couple of years before using it. So I would expect a quite large woodpile whereever the Rauchmalz is produced. On my first tour of Weyermann back in 2002 I asked specifically about seeing Rauchmalz made but they told me they had recently had a bad fire and they couldn't show that. The second tour was a few years ago (2010?) and that maybe where I heard about Hassfurt. |
