Id like to do one of the walks next time we are in Bamberg, maybe the one Jurgen has suggested. If they dont have it in the Bamberg tourist office we can pick one up in Bad Staffelstein. Sounds like the tourist office there is next to the Railway Station(Bahnhofst.).
