Bamberg planning help needed

It all sounds doable.  Some suggestions:

Day 1 - Beware of odd closing times in Bamberg.  Just check the brewery websites for that info.

Day 2 - Merkendorf is a great choice.  But if you're heading north consider going to the breweries in Ebing and Höfen (and possibly a bit further to Freudeneck and Mursbach).  Both not far from Kemmern and both close to each other.  I'd rate them highter than Göller and Höhn.  The beer at the brewery in Hofen I'd put in my top 5 Franconian beer of all time list.

Day 3 - If you're going to Griess (good choice) then might as well have a quick stop at nearby Krug if you have time and maybe also Sauer in Rossdorf Am Forst.  I'd pick Löwenbrau in Buttenheim over St. Georgen any day.  If you go to Kreuzberg don't forget Roppelt's keller (I probably didn't need to mention this - Nick would have). 

A good stop on the way to Eschawo that I have done twice and found it convenient and worthwhile is Pottenstein and the two breweries there.
