OT: where to get Hefeweizen Hefe

I didn't, but it makes sense. Speisen can also have "to feed" connotations, like "einspeisen". So Speisse is the feed for barrel- or bottle-conditioning.

The other original question remains though -- how common is this in modern Teutonic brewing?
