Stiftung = an enterprise or organisation (most: non-commercial) that gets the money from the "Stifter" (people that donate).

The word "Stift" is in the historic language of the carpenters a small piece of wood. It was used as a nickname for young, small men in the first year of their education (the majority in the age of 15, 16 years old, after 9 or 10 years school). Later this word (plural: Stifte) has been used for all young men and women in their handcraft education.

The official word has been: Lehrlinge (apprentice).
Actual the official word is "Auszubildende" (Google translates to trainee).
Lehrlinge / Auszubildende particiates in the so-called "Duale Berufsausbildung" ("dual vocational training"). They get a contract and their wage from an enterprise, working and learning there and visiting a vocation school for some months (sometimes a day per week or coherently some weeks/months per year .

These vocational schools are specialised for handcraft brances.
For brewers a such school is located in Karstadt. So they get apprentices from a great environment). For other branches with more apprentices You can find vocational schools in many cities.
