A bit tongue in cheek, my musing about how Humphrey Smith does it was. Also to consider - that OBB is served from *wooden* barrels, too. So much character at 4% ABV. The new Hyde's hotel & gastropub will be something for you & J to check out sometime. The Abel Summat. They've obviously spent a fortune on the place.
