| I mean, if a beer is unfortunate to have diacetyl in it, yes, one should be able to taste and smell it, but it could also be detected chemically in a properly-equipped laboratory by a properly-trained laboratory technician. Breweries have beer tested for all kinds of things, including IBUs. |
