Spezial Keller opening times

I don't understand why they don't just shut the kitchen after lunch if the reason really is kitchen staff. Not everyone has to eat every time they go out for a beer. Or revive an almost lost tradition of allowing people to bring their own food. Clearly they earn so much money on the other days that they don't need to worry about it.
