Lagering in Keller

I suppose there's a parallel with real ale which is delivered "unfinished" to pubs and conditioned in the pub cellar. The result is massive inconsistency between pubs depending on cellarmanship skills and hygiene. And live beer, generally, doesn't like being moved.
