Untergärig vs. Obergärig

No need to warn, there was a huge sign but you know that we are rebellious people!  More to the point, when we got there, there was no one else there, not even staff.  We'd actually nearly finished when the officous young lady came marching up and demanded that we cease munching.  She was a little less demanding when she found out that we weren't German.  Her attitude was matched by her partner who refused to sell us beer until the hand of the click hit 2 pm (I think that was the time), even tough he'd been set up for more than half an hour.  And matched also by the attitude of the barman (who I think was the owner) at the stube who was very much less than welcoming.  Someone ought to tell these people that the customer is always right, even when they are wrong!

See my other email for general comments about uber v ober but surely you've got this wrong!  Surely the practice of using caves in Bavaria came about because of the problems of unterg brewing?  After all, they didn't scour the hillside for caves in the UK, Belgium, etc.  They simple accepted the difficulty and adopted another method!  Still puzzled.
