I found an explanation under www.webfo.franken.de/html/wappen.html: When the shield was created in the early 13th century, they wrote the name of the city "Vorchheim" and thought, it comes from the old-german word "Vorhe", which means "Forelle" in modern german (trout in english). Today some germanists think, that the name, which is much older than the shield, cames from the old-german word "Vorha", which means "Foehre" in modern german(pinetree in eglisch)
