I learned that the English "kabob/kebab" spellings are farther removed from the original Türkish spellings whilst reading up a bit about Döner. When the Türks say it's "Kebap", I'll accept that they should know! ;) I can't find the exact article I'm thinking of, but these are good enough: http://en.wikipedia.org/wiki/Kebap and http://en.wikipedia.org/wiki/Shashlik in English and http://de.wikipedia.org/wiki/%C5%9Ei%C5%9F_Kebap or http://de.wikipedia.org/wiki/Schaschlik auf Deutsch, which describes a Rheinland version being ... I always forget how to translate "geschmort" ... braised in a sauce rather than grilled. THIS is the kind I see served around here--braised in sauce as opposed to grilled. I've never been particularly interested in it; to me it's always sounded about as tasty as currywurst.
