Don't think you underdstand the principle of real ale! The point is that the beers are still fermenting when they are delivered to the pub, allowed to settle for a day or two and then the barre is finished within 3 - 4 days. Yes, bad pub keepers can serve bad ale, but that is fairly rare nowadays with air conditioned cellars, etc.
