Bottom Fermentation Prior to Industrialisation

I posted too quickly...I'd neglected to remember that although the yeast wasn't specifically understood, Bavarian brewers had been lagering their beer as cold as they could for centuries prior to Carlsberg, thus developing bottom fermenting yeast prior to industrialisation.
