Thanks for that Mark - food for thought. I'll certainly start with ales first, as I understand that process better; also use malt extract (from a kit). A cellar - wow, that would be something here! I think that's there's hardly a house within a fifty mile radius that has a cellar - just not done here. Just done a bit of converting to celsius. It certainly be difficult to maintain a temperature of less than 40F (4.5C), though I might manage less than 50F (10C) for a lot of time in my garage. We don't get a lot of really cold weather, mnainly stays above OC. Though last winter, I could have lagered away for months but am willing to sacrifice that possibility this year! It probably be even more difficult to explain to my wife why I'm buying a chest freezer for much the same reason as yourself, even if I could find one locally.
