Bottling Homebrew and Dementia in Franconia

I started out to write the above post because he describes a peculiar bottling method similar to my own. But then I wrote about the other two things and forgot the first one. Sheesh.

He describes the bottling process for homebrewers as often foregoing a secondary fermentation in a special vessel for production of CO2. He says, mostly, the beer will be directly filled into bottles (I guess whilst still in primary fermentation). Then the bottles must be carefully opened every day for the first 3 - 6 days, to prevent excess carbonation from building up.

Okay, that's a bit more primitive than what I do. I wait til the primary is 85 - 90% done, based on timing and gravity readings, and then bottle it, letting the rest of the primary fermentation do the carbonation. I don't need to open the bottles.

The downside of this is excess yeast in the bottles, and also fairly heavy yeasty aromas in the resulting beer. The up-side of this is turn-around, saving the 2 weeks of conditioning time required for conventional bottle-conditioning. I can start drinking within a couple of days of bottling, or 4 or 5 days of brewing. A bit rough, it is, but still, tough times demand tough measures.
