In my experience, this is more Bavarian (or Franken/Oberpflaz) than unique to Zoiglstube.  In fact, in Eschawo, there is some variation.  It's not really like that in Loistl, Weisse Schwann (which has now become an 'official' Echte Zoigl location) has a typical hotel-type bar configuration (unless it has changed with its new designation), while Binner and Fiedelschneider have tables arranged around the perimeter of the main room.  I think what is unusual (rather than unique) is the way that everyone joins together and the general hospitality and friendliness.  But I put that down to Eschawo/Neuhaus being just small villages and because all the Zoiglstu'n are bars more than eating houses, although most people usually eat something ('brotzeit').

Goeller in Drosendorf and the Merkdorf stub'n had similar layouts but, although pleasant enough (especially Wagner), were not as openly friendly as anywhere in Eschawo/Neuhaus.
