Griess Keller - Dispense

I wonder about all this!

Is it such a complex task - given the years of experience these people have had - to estimate the quantity of beer required for a given day/weekend and then to simply fill the requisite number of barrels at the brewery?  Both Griess and Roppelt kellers are within a sparrow's fart of their respective breweries, so it should not be too much trouble to fill up a few more barrels if needed.

Further cogitating: What is the shelf-life of untergarig beer within a Fass?  I know obergarig beer lasts for a good few days (even weeks) without serious deterioration if stored at the correct temperature, mainly because it is a living entity - i.e. continues to ferment when transferred from the fermentation vessel into the cask.  I assume that something similar happens with Franken Kellerbier, providing it is not filtered, albeit presumably at a slower rate.

The problem of beer deteriorating in the Fass seems to be at the root of so many issues in Franken beer, such as Stefan Michels reluctance to fill barrels of U because of fear of waste.  I assume that Matthias Trum does not suffer such fears as all the Marzen in Schlenkerla comes from a barrel that, I assume, is filled at the brewery, which, unlike at Mahrs, is not situated right next to the Gestatte. 

Incidentally, in England, duty and VAT used to be levied in the brewery on the overal quantity of beer produced.  As a result, it was possible to reclaim duty/VAT on beer returned from pubs as unusable due to deterioration (ullage).  I don't know whether this is still the case.
