OT: where to get Hefeweizen Hefe

I assume that there will be some hefe at the bottom of any bottle, could you use that?  This was what homebrewers in England did in the days when it was difficult to get good beer yeast.  Guinness (originally sold bottle conditioned) and Worthington white label were the favourite donors.  You got the added bonus of drinking a bottle of beer before using the remains to start a fermentation.

As a matter of interest, what beers are brewed using 'Speise'?
