Never mind the sparklers, we like our beer with a head on it. But, unlike 'fizzy' beer in other places (including Germany), in the north of England, this is done mechanically, i.e. by just narrowing the nozzle on the delivery pipe and, thus, injecting more air into the liquid. OK, you may lose a minute amount of beer in the pint but that is compensated for by lower prices than in the south of England. Mind you, I'm not knocking 'southern' beer (having run a pub in the south), it's just 'horses for courses'.
