| Hölzlein is such a frustrating brewery to love. I continue to visit because it's close to many other favorites and I like Johann a lot, but it's difficult to find good batches these days. The Vollbier used to have a lot of DMS (cabbage and corn) from a short steam off (Hölzlein is one of five Franconian breweries with a coolship). After Andy Ganstaller mentioned this to Johann, the DMS was fixed but nearly every batch since has had strong diacetyl. In November when I visited the diaceytl in the Vollbier was strong, and Manuele Collona said the same thing about barrels he brought to Rome around then, and Andy said the same when put to his nose. In March I visited with Joe Stange, we both found diacetyl in the Vollbier and Dunkles, but disagreed on how forward it was in the Dunkles. Joe found it mild while I found it strong... the Dunkles seemed like it would have been a nice beer if not for diacetyl. It's a single-hop-single-malt (Munich malt and Spalt hops), and would serve as a lesson for what those two ingredients can do, again, if not for the flaw. |
