Schlenkerla and Spezial

At  Spezial the Lager and U come from servering tanks in the basement. I'm assuming the Märzen does as well but when I had a tour (13 years ago!) they only had two draft beers.

As for Schlenkerla I aways found it varies a bit -- less smokey in the warmer months. My take on this (100% guesswork) is their limiting factor in production is the self made rauchmalz -- which they don't make in the warmer months. So it wouldn't surprise me if grain bill had some pale malt added at times to stretch things out. If they are increasing production (e.g. for export) then this may happen more frequently.

I've suspected the same at Spezial as their "malterei" is much smaller than Schlenkerla and I have noticed some change in smokiness from time to time.
