Malt from Weyermann, Nick. I've got a very good friend there and get the malt for a reasonable price. And no, I never did any water analysis. I just rely on the experiences of other brewers. Many of them use Sauermalz to guarantee a perfect enzyme work. Last time it worked very well with hard water so I just keep it. Actually I don't want to know what happens. I just want to have a good result. ;-)
