The only calendars of the Bockbieranstichs are not written or not complete for the automn 2015, p.e.

But if You look on the old dates (for 2014)::

You can see, that the bockbeer saison in the automn 2014 started end of September.
The first Bockbieranstich in the city of Bamberg is on the first thursday after the 3th October (Schlenkerla Urbock). So the best time for bocks is mid or end of November, when the most bocks are still available and You only miss the last bocks, that start before christman.

Between 15th and 20th September You only can get - maybe - some last bottles of spring bocks. Or bottle of  bocks that are available the whole year, p.e. the Weiherer Bock.

Or You get good connections to the breweries and try to get bottles of their reference samples. P.e. Stefan Zehendner has reference samples of his Weihnachtsbocks (christmas bocks) of the last ten years and more and they are still very good. But I don't know if You are so specialized to like to drink vintages of the same beer. But they don't offer such samples for every man (but maybe for friendly foreign beerlovers, brewers, homebrewers.
