I guess I've been doing something similar since 1998 -- every year I've lead a group to visit Uerige in Düsseldorf on their October Sticke day. The trip has expanded to Antwerp and/or Brussels and Bamberg plus usually one other place on the front or back end (Prague, London,  Salzburg, Berlin, Amsterdam, etc.). We used to regularaly start or end in Amsterdam but it has gotten so expensive there we don't go very often.

It is not a formal tour -- what I do is publish a schedule and anybody is welcome to join for a day or for the whole trip. I will usually book a block of hotel rooms (cancelable ones) but everybody pays for their own. Travel is all via public transportation. If we need to take taxis, we do so and split the fare. This does somewhat limit the places we visit.

It started out mostly being members of my local homebrewing club -- at that still forms the core. Most of them are seasoned enough travelers to do it all on their own, but it is much more fun to do it in a group, especially a beer knowledgeable group.

Now if you are trying to make a living with it, that is a different thing and much harder. But something informal could work -- you could even charge a small "guide fee" to cover your expenses you had. I certainly would be interested in going on something like that, if the timing worked.
