Griess I think is Hallertau hops, more floral, citric, etc., less woody/spicy/earthy, which is something I get more frequently from Spalt varieties than Hallertau varieties.   My good friend Jeff somewhat disagrees with me as to the character differences with the two regions, but a lot of our disagreement comes down to taste.  I think Witzgall Landbier is Hallertau Tradition (have to check my notes), and that beer's hop aroma is all sorts of citrus and flowers and whatnot, rather than "wood", "spice", "earth", etc., that is to be found in Spalt Tradition.  I don't know enough about cultivation to say that the difference is due to growing region (terroir!) or if the Spalt and Hallertau strains have diverged enough for the aroma and flavor differences to be perceptible (that would be my guess, though).  

As for the hops used, I try to ask when talking with brewers, or servers, or anyone else who happens to know concretely. I do this to challenge myself with a guess beforehand, and to use it as a learning exercise afterwards.
